Ingredients
Green Banana Flour tortilla (11~12 pieces of 12cm)
- 100g Banana Island green banana flour
- 3 eggs
- 5g vitamin powder (for color and flavor, you may add any of your choosing)
- 1g salt
- 200g water

Taco (4 pieces)
- 150g potatoes
- 1/3 tsp onion powder
- 1/2 tsp garlic powder
- 1/2 tsp paprika
- 1/4 tsp cumin
- 1/2 tsp salt
- 5g olive oil
- 40g water parsley (or substitute with arugula or cilantro)
- 40g melon (skin-on, cleaned) (or substitute with any fruit of your choice)
- 32g chipotle mayo or chili mayo
- 1/2 lemon
How to make
Step 1. Make the Green Banana Flour Tortillas
1. In a mixing bowl, whisk together Banana Island green banana flour, vitamin powder, and salt. Add water and mix well. Lastly, add the eggs and mix until smooth.
2. Heat a frying pan with a light coating of olive oil. Wipe excess with a paper towel.
3. Pour 50ml of batter into the center of the pan to make a 12cm tortilla.
4. When bubbles form on top (like a pancake), wait 1 more minute, then flip.
Cook for 2 more minutes.
5. Remove and cool on a plate. Repeat until all batter is used.
Step 2. Prep the Taco Filling
1. Peel and dice potatoes into 1cm cubes. In a bowl, toss with olive oil and all listed spices.
2. Rinse water parsley, trim tough stems, and cut into 2cm pieces.
3. Clean the melon by scrubbing the skin with coarse salt. Cut off the ends, halve it, remove the seeds, and dice into 1cm cubes.
4. Cook seasoned potatoes in a frying pan with 1 tbsp olive oil for 8–10 minutes, stirring occasionally.
Oven option: Bake at 180°C for 8 minutes, stir, and bake another 4 minutes. Adjust time depending on your oven.
Step 3. Assemble the Tacos
- Take one tortilla. Add:
- 30g roasted potato
- 7g water parsley
- 10g melon cubes
- 7g chipotle or chili mayo
- Drizzle a squeeze of lemon over the top.
- Repeat and arrange beautifully on a serving plate.
- Repeat baking.
