Ingredients
For the Crepe Batter (4 servings):
- 120g Banana Island green banana flour
- 500ml milk (warm)
- 2 whole eggs + 1 egg yolk
- 30g salted butter (melted)
- 30g brown sugar
- 5–6 drops vanilla extract
- A pinch of salt

- 1 crepe + 50g sirloin ham + 1 egg + 3 sundried tomatoes + 2 sprigs thyme + 1 tbsp olive oil

- 3 crepes + 7g cheese + 15 black olive slices + 1 tbsp balsamic glaze
🍊 Fresh Dessert Style
- 3 crepes + ⅔ tangerine + 3 tbsp tangerine syrup + powdered sugar + apple mint or thyme
👩🍳 How to Make It
1. Prepare the batter. In a mixing bowl, sift the Banana Island green banana flour.
2. Melt the butter and warm the milk in the microwave.
3. Add brown sugar and a pinch of salt to the flour. Whisk in the eggs, extra yolk, and melted butter.
4. Gradually pour in the warm milk while whisking continuously. Strain once more for a smooth texture.
5. Cover the batter and refrigerate for 30 minutes.
1. Pan-fry the crepes. Heat a nonstick frying pan and lightly coat it with olive oil (spray or paper towel).
2. Stir the rested batter and scoop with a ladle (~40ml). Pour into the pan and swirl to spread thinly.
3. When bubbles appear in the center, wait another 2 minutes, then flip.
Cook until golden brown on both sides.
