🍖 Ingredients
For the Pork
- 250g pork (thinly sliced shoulder or ham)
- Salt & pepper to taste
- ½ tsp minced garlic (optional)
- 1 tsp oil (for seasoning)
- Cold water (to soak)
For the Batter
- 2 tbsp Banana Island green banana flour
- A pinch of salt
- Cold water (enough to make a dripping consistency)
- Cooking oil for frying
👩🍳 How to Make It
1️⃣ Prep the Pork
- Place the pork slices in a bowl and cover with cold water. Let them soak for a few minutes to remove excess blood.
- Drain well, then season with salt, pepper, a bit of minced garlic (optional), and a teaspoon of oil. Set aside.
2️⃣ Make the Batter
- In a separate bowl, mix 2 tablespoons of Banana Island green banana flour with a pinch of salt.
- Slowly add cold water while stirring to create a smooth batter.
- Tip: The batter should drip off the spoon slowly — not too runny, not too thick.
3️⃣ Fry the Pork
- Dip each seasoned pork slice into the batter, coating it fully.
- Heat oil in a pan over medium-low heat (important: green banana flour cooks faster than wheat flour).
- Fry each piece until golden and crispy, making sure the inside is fully cooked.
- Adjust heat to avoid burning the batter before the meat is cooked through.
- Remove and place on a paper towel or mesh rack to drain excess oil.
