Ingredients (for 10 people)
Mushroom Soup
- 600g baby button mushrooms (fresh or canned)
- 150g shiitake mushrooms
- 160g onion
- 8g garlic
- 40g butter
- 3 tbsp avocado oil
- 2g rosemary
- 1 bay leaf
- 1 cube (10g) vegetable stock
- 200ml whipping cream
- 50g Banana Island green banana flour
- Salt & pepper to taste
Toppings
- 3 slices of bacon
- 1g Italian parsley
- 30ml whipped cream
How to make

Prep mushrooms & bacon
Rinse the button mushrooms thoroughly and drain. In a frying pan, cook the bacon on both sides until crispy and golden. Let it cool on a paper towel, then chop into small bits (approx. 5×8mm).

Chop vegetables
Slice the mushrooms into 5mm pieces, dice the onions, and crush the garlic. Remove shiitake stems (save for broth later).

Sauté
In a heated pot, add avocado oil and butter. Once melted, sauté onions until translucent. Add mushrooms and a pinch of salt, then stir-fry until the mushrooms release their juices. Add rosemary and bay leaf.

Make banana flour mixture
Dissolve 50g of Banana Island green banana flour in 50ml of cold water. Set aside.

Add stock and simmer
Dissolve the vegetable stock in 950ml of hot water. Pour it into the pot. Let it boil for 20 minutes. Then, stir in the banana flour mixture and whipping cream. Bring to a boil for 2 more minutes, then turn off the heat.

Blend to your liking
Remove rosemary and bay leaf. Use a hand blender to blend the soup to your preferred texture — less for chunky, more for smooth.

Season
Add salt and pepper to taste.

Serve & garnish
Ladle the soup into bowls, garnish with bacon bits, chopped parsley, a swirl of whipped cream, and a drizzle of olive oil. Enjoy!
