  • 60g Banana Island green banana flour
  • 60g almond flour
  • 5 eggs (separated)
  • 50ml warm milk
  • 50g brown sugar
  • 40g maple syrup
  • A pinch of salt

 

For the Topping (Optional)

  • 300ml whipped cream
  • 15 fresh strawberries (or substitute with any fruit of our choice)
  • Apple mint (for garnish)

🍰 How to Make a Fluffy Sponge Cake in a Rice Cooker

🥚 Step-by-Step Instructions

  1. Prepare two mixing bowls – One should be large enough for whipping egg whites.
  2. Separate the eggs, placing yolks and whites in separate bowls. Pass both through a sieve to remove any membranes (this helps with texture).
  3. Chill the egg whites in the refrigerator. (Cool whites whip more easily and hold better foam.)
  4. In the bowl with egg yolks, add warm milk, Banana Island green banana flour, almond flour, maple syrup, and a pinch of salt. Mix well and set aside.
  5. Take the chilled egg whites and whip them until foamy. Gradually add brown sugar in 3 parts while whipping. Continue until you reach soft peaks. (Don’t add all the sugar at once.)
  6. Gently fold the whipped egg whites into the yolk-flour batter. Mix carefully until the batter becomes smooth and fluffy.
  7. Line your rice cooker bowl with parchment paper, pour in the batter, and start cooking.
    • Tip: The cake is ready when a toothpick inserted into the center comes out clean.
  8. Once cooked, carefully invert the cake onto a cooling rack or perforated pan. Let it cool completely.
