For the Sponge Cake
- 60g Banana Island green banana flour
- 60g almond flour
- 5 eggs (separated)
- 50ml warm milk
- 50g brown sugar
- 40g maple syrup
- A pinch of salt
For the Topping (Optional)
- 300ml whipped cream
- 15 fresh strawberries (or substitute with any fruit of our choice)
- Apple mint (for garnish)

🍰 How to Make a Fluffy Sponge Cake in a Rice Cooker
🥚 Step-by-Step Instructions
- Prepare two mixing bowls – One should be large enough for whipping egg whites.
- Separate the eggs, placing yolks and whites in separate bowls. Pass both through a sieve to remove any membranes (this helps with texture).
- Chill the egg whites in the refrigerator. (Cool whites whip more easily and hold better foam.)
- In the bowl with egg yolks, add warm milk, Banana Island green banana flour, almond flour, maple syrup, and a pinch of salt. Mix well and set aside.
- Take the chilled egg whites and whip them until foamy. Gradually add brown sugar in 3 parts while whipping. Continue until you reach soft peaks. (Don’t add all the sugar at once.)
- Gently fold the whipped egg whites into the yolk-flour batter. Mix carefully until the batter becomes smooth and fluffy.
- Line your rice cooker bowl with parchment paper, pour in the batter, and start cooking.
- Tip: The cake is ready when a toothpick inserted into the center comes out clean.
- Once cooked, carefully invert the cake onto a cooling rack or perforated pan. Let it cool completely.
